What were the militaries of the 19th Century, being based around class, like in its structure?

I believe that we are more or less familiar with the structure of the modern day military which is not heavily based on class, but rather more on achievement. But in the past, especially the 19th Century, this was not so. How was it like? The food, the uniforms, the structure, the ranks?
